Stuffed Flank Steak

Sticking to my weekly schedule, I'm posting another "recipe" on this Wednesday. I'm using the word recipe lightly because this is just something I threw together, last minute. Since football, we do A LOT of easy, throw together meals. I buy flank steaks a lot because they're cheap and easy (keep the jokes to yourself). A two steak pack at Costco will run you about $20. I marinate one in a Ziplock bag and throw it into the freezer for later use. I wanted to something different, so I pulled a Sandra Lee. I prepared some Stove Top stuffing (oh yes I did!). Easy peasy, done in just a few minutes and lots of flavor. I bought chicken flavor, but I'm sure anything would work. While the stuffing was steaming, I cooked up some sage flavored, Jimmy Dean sausage. Have you tried this? It's so super, duper yummy!
Once the sausage was all cooked up and the stuffing was nice and fluffy, I mixed the two together. I then flattened the steak on the counter, laid some slices of provolone cheese on it and then mounded the sausage/stuffing mixture on the top. I then (and here is when it gets SUPER technical, so pay attention!) smushed down the stuffing mixture so it was flat and easy to roll.

I rolled the whole thing up, stuck in a couple of squewers and plopped it onto a cookie sheet (lined with foil and sprayed with cooking spray). I put it into a 350 degree oven for about 20 minutes.

Now prepare yourself. Are you sitting down?

Not pretty. HOWEVER, it was AWESOME! The stuffing got a little crispy on the ends, the cheese melted marvelously and the steak was done to perfection!

Jack said it needed more cheese. So next time I will put on double the cheese (I used 3-4 slices), but this was wonderful! Easy to make, quick to cook and had awesome flavors! I will definitely be doing this meal again!!
